Here are 2 traditional Christmas recipes. Enjoy.
5 Microwave Fudge
Prep Time: 5 minutes Total Time: 5 minutes
Ingredients:
3 cups semi-sweet chocolate chips
1 14-oz can condensed milk
1/4 cup (4 tbsp) butter
1 tsp vanilla extract
1/4 tsp salt
1/2 - 1 cup chopped walnuts (optional) / pecans / bits o' brickle / tiny marshmallows
Preparation:
1. Prepare an 8x8 pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray.
2. In a large microwave-safe bowl, combine the chocolate chips, condensed milk, and butter. (Don't mix it up ahead of time) Microwave in one-minute increments until melted, about 2-3 minutes.
3. Stir to ensure all the chocolate is melted, then add the vanilla and salt. Stir until the candy is smooth, glossy and well-mixed. I add chopped walnuts at this stage and/or even some tiny marshmallows.
4. Pour the fudge into the prepared pan and smooth it into an even layer. Cover with plastic wrap resting on top of fudge.
5. Place the fudge in the refrigerator to set for at least 2 hours.
Once set, cut into 1-inch squares and serve at room temperature. I put the cut pieces into decorative paper candy cup to give as gifts.
Store excess fudge in an airtight container in the refrigerator.
Can also stir in 1 c. bits o' brickle and 1 c. of toasted pecan pieces
toast nuts 400 degrees for 10 minutes
Bourbon Ball Cookies Ingredients:
1 cup fine vanilla wafer crumbs
1 cup finely chopped pecans
1 cup confectioners' sugar
2 tablespoons unsweetened cocoa powder
1/4 cup bourbon
1 tablespoons plus 1 1/2 teaspoons light corn syrup
confectioners' sugar, sifted
Preparation:
Thoroughly combine 1 crushed vanilla wafer crumbs
1 c chopped pecans
1 cup confectioners' sugar
2 T cocoa
In a separate bowl, blend the bourbon and corn syrup.
Stir this bourbon mixture into the dry mixture; blend well.
Cover and chill for at least a few hours.
Sift about 1/2 to 1 cup of confectioners' sugar on a cookie sheet.
Shape small bits of the dough into balls and roll them in the confectioners' sugar
or sift the powder sugar over the balls rolling them around to make sure that they are completely covered in white
Store in refrigerator in tightly covered containers.
Make these a few days in advance for best flavor, and roll in confectioners' sugar again before serving, if desired. These can also be frozen for longer storage.
Makes about 3 dozen bourbon balls.
Caution.. the whiskey in them gives a slight pleasant buzz.

Eating broccoli, spinach and egg yolks can preserve your memory in old age, study finds
Eat broccoli, spinach and egg yolks if you want to have a good memory in old age.
Adults who have high levels of lutein are better able to recall skills and information they learnt many years ago, a new study found.
The protective compound can be found in a range of green leafy vegetables and helps to preserve 'crystallized intelligence'.
It is believed to accumulate in the brain, where it has a protective effect on the region responsible for memory.
Adults who have high levels of lutein - a protective compound found in leafy green vegetables - are better able to recall things they learnt many years ago
Researchers from the University of Illinois tested 122 adults between the age of 65 and 75 on their crystallized intelligence.
Blood samples were also collected to determine levels of lutein and MRI scans were conducted to analyse brain structures.
They focused on parts of the temporal cortex, a brain region that other studies suggest plays a role in the preservation of crystallized intelligence.
They found participants with higher blood serum levels of lutein tended to do better on the tests.
While they also tended to have thicker grey matter in the brain region that crystallized intelligence can be found - the parahippocampal cortex.
Consuming the pigment helps preserve 'crystallized intelligence' - the ability to use skills and information acquired previously, a new study found
Lead researcher Aron Barbey said: 'We can only hypothesize at this point how lutein in the diet affects brain structure.
'It may be that it plays an anti-inflammatory role or aids in cell-to-cell signaling.
'But our finding adds to the evidence suggesting that particular nutrients slow age-related declines in cognition by influencing specific features of brain aging.'
Previous research has found lutein also helps to ward off vision loss.
A Florida International University study found it helps to prevent age-related macular degeneration - the leading cause of blindness in the developed world.
While it is also believed that the compound helps to ward off wrinkles as people grow older by keeping the skin flexible and hydrated.
The new study was published in the journal Frontiers in Ageing Neuroscience.

SNICKERDOODLES
from Martha Stewart’s Cookies
Ingredients
14 5/8 oz. (2 3/4 cups) flour (at 8500 ft. use 16 oz. flour or 3 cups)
2 tsps baking powder
1/2 tsp coarse salt (at 8500 ft. use 1/2 tsp + an extra pinch)
8 oz. unsalted butter, room temperature
1 1/2 cups white sugar
2 large eggs, room temperature
2 tbsps white sugar
2 tsps ground cinnamon
Oven: 350°F.
Combine the flour, baking powder, and salt in a bowl. Mix well (you could sift it, but I don’t).
Beat the butter and 1 1/2 cups sugar together with paddle attachment on medium until fluffy and pale – about 3 minutes. Add the eggs and beat until incorporated. Reduce the speed to low and gradually add the flour mixture.
In a small bowl, combine the remaining 2 tablespoons of sugar with the cinnamon until evenly mixed.
Shape the cookie dough into little balls. I like 1-inch diameter balls, but the book suggests 1 3/4-inch diameter balls. If you make smaller ones, you make more cookies. If you make bigger ones, you have fewer (but bigger) cookies. Your choice. Roll the dough in the cinnamon-sugar mixture and place on a baking sheet at least 3-inches apart (okay, for the smaller dough balls, they can safely be 2-inches apart). Bake the large ones for 12-15 minutes until the edges are golden.
Bake the small ones for 10-11 minutes (11 minutes for me). Remove to cooling racks and let cook. Store in airtight containers for up to 3 days. Makes about 18 large cookies or 4 dozen smaller cookies.
Peppermint Meringue Kisses
1 cup confectioners sugar
2 large egg whites
1/8 tsp peppermint extract
Approximately 1/3 cup crushed peppermint candies or candy canes
2 tbsp red sprinkles (optional)
Heat the oven to 175°F. Line 1 large cookie sheet with parchment (not a nonstick liner). Sift the confectioner’s sugar twice to remove all lumps and divide into two fairly equal portions.
Put the egg whites in a medium bowl. Beat with an electric mixer on medium speed until foamy. Increase the speed to medium high and beat until the whites hold soft peaks. Continue beating while gradually adding one portion of confectioner’s sugar. Beat until firm, glossy peaks form. Add the peppermint extract and mix briefly. Sift the remaining confectioner’s sugar over the meringue and gently fold in until blended.
Scoop the meringue into a large pastry bag fitted with a large (# star tip. Pipe swirled kisses (about 1-1/2 inches wide and 2 inches high) about 1 inch apart onto the prepared cookie sheet. Sprinkle the finely chopped peppermint candies over the kisses.
Bake until dry and crisp, about 3 hours. Turn the oven off and let the meringues cool in the oven for 1 hour.** Serve immediately or cover and store at room temperature for up to 1 week.
**I followed her recipe to a T, with the exception that I forgot to leave them in the oven for the extra hour to cool. They were still fabulous.

Stand Mixer ›
INGREDIENTS
1-3/4 cups all-purpose flour
2 teaspoons sugar
3/4 teaspoon table salt
6 tablespoons cold unsalted butter, small dice
1/4 cup shortening
7 tablespoons ice water
1 tablespoon powdered sugar
4 large eggs1
1/2 cups firmly packed brown sugar
1/2 cup granulated white sugar
1/2 cup chopped pecans
2 tablespoons all purpose flour
2 tablespoons milk
1 vanilla bean, split and scraped1
1/2 teaspoons bourbon1
1/2 cups pecan halves
DIRECTIONS:
In a large bowl, mix together flour, salt, and sugar until well combined.
Using clean hands, add butter and toss until just coated.
Rub butter between thumb and forefingers to incorporate into flour mixture until butter and comes together in quarter-sized clumps when squeezed in palm, about 2 minutes.
Add shortening, toss until just coated in flour, then rub into flour mixture until mixture forms pea-size pieces (some big chunks should remain) and comes together in fist-sized clumps when squeezed, about 1 minute.
Drizzle in half ice water and rake through mixture with fingers until just moistened.
Drizzle in remaining water 1 tablespoon at a time and comb through mixture with fingers to moisten. It will go from being a shaggy mess to coming together. Dough is moist enough when it is moistened through but is not wet when pressed. (Do not overwork the dough or it will become tough.)
While rotating the bowl with 1 hand, push dough between other palm and side of bowl to gather into a ball. Turn dough onto a piece of plastic wrap, press it into a flat disk, then close in wrap. Place in coldest part of refrigerator (usually back bottom shelf) at least 30 minutes before rolling out and forming into a crust.
Preheat oven to 325.
Fit piecrust into a 10-inch cast-iron skillet; sprinkle piecrust with powdered sugar.
Whisk eggs in a large bowl until foamy; whisk in brown sugar and next 7 ingredients.
Pour mixture into piecrust and top with pecan halves.
Bake at 325 for 30 minutes; reduce oven temperature to 300, and bake 30 more minutes.
Turn oven off, and let pie stand in oven, with door closed, 3 hours.
Serve with Vanilla Bean Ice Cream.

Eggnog Latte
1/3 cup 2% milk
2/3 cup eggnog
1 shot (1.5 ounces) brewed espresso
Nutmeg (optional)
Prep time: 5 minutes
Total cook time: 6 minutes
Directions
Pour milk and eggnog into a steaming pitcher and heat to between 145-165 degrees F, using the steaming wand.
Brew the shot of espresso, then add to mug.
Pour the steamed milk and eggnog into the mug, using a spoon to hold back the foam. Spoon foam over the top. Sprinkle ground nutmeg (or grind fresh nutmeg yourself) on top of the foam.
Eggnog Recipe
Ingredients
• 4 eggs, separated
• 1 ½ cup sugar
• ½ pint good rum
• 1 pint whiskey
• 2 quarts of milk or cream
• ½ tsp nutmeg
Directions
1 In a large bowl or stand mixer, add the egg and sugar, beat
2 Add milk, beat and taste for sweetness
3 Add rum and whiskey, you can add more or less according to your taste
4 Beat egg whites in a separate bowl with a pinch of salt until frothy
5 Add egg whites to milk mixture, stir
6 Add nutmeg, stir, and serve

Seasonal recipe: Overnight Christmas French toast
Put this together anytime on Christmas or New Year's Eve — even during the day. Before you start making your coffee the next morning, pre-heat the oven. When you pour your first cup of coffee, throw the casserole in the oven — even if it hasn’t fully preheated. Go open gifts. By the time you’re done opening your gifts, breakfast will be just about ready.
This dish doesn't have to be for Christmas only, though. It's great any holiday morning or any Saturday morning for that matter - any time you want a little something extra special for breakfast.
Overnight Christmas French toast
Ingredients
1/2 cup brown sugar
1/2 cup butter, melted
3 teaspoon ground cinnamon, divided
3 tart apples (Granny Smith, Winesap, Rome or other)
1/2 cup dried cranberries (or cherries)
bread, ripped into pieces (about 2/3 a sandwich loaf or other bread that you choose)
6 large eggs
1 1/2 cup milk (skim works just fine)
1 tablespoon vanilla extract
Directions
1. Combine brown sugar, butter, and 1 teaspoon cinnamon in a 9x13 inch baking dish. Add apples and cranberries, mix together then spread evenly over the bottom of the dish.
2. Place bread pieces over the mixture until they reach the top of the baking dish.
3. In a blender, mix eggs, milk, vanilla and 2 teaspoons cinnamon until well blended (can also use a wire whisk – blend really well). Pour over evenly over bread, soaking completely. Cover and refrigerate over night – up to 24 hours.
4. In the morning, preheat oven to 375°.
5. Cover dish with oven-proof cover and bake for 40 minutes. Remove cover and bake an additional 5 minutes.
6. Let stand 10 minutes before serving.

5,000-Year-Old Nativity Scene Found in Egypt
Ancient cave art in the Egyptian Sahara desert depicts two parents, a baby and a star in the east.
Marco Morelli - Italian researchers have discovered what might be the oldest nativity scene ever found — 5,000-year-old rock art that depicts a star in the east, a newborn between parents and two animals.
The scene, painted in reddish-brown ochre, was found on the ceiling of a small cavity in the Egyptian Sahara desert, during an expedition to sites between the Nile valley and the Gilf Kebir Plateau.
"It's a very evocative scene which indeed resembles the Christmas nativity. But it predates it by some 3,000 years," geologist Marco Morelli, director of the Museum of Planetary Sciences in Prato, near Florence, Italy, told Seeker.
Morelli found the cave drawing in 2005, but only now his team has decided to reveal the amazing find.
"The discovery has several implications as it raises new questions on the iconography of one of the more powerful Christian symbols," Morelli said.
The scene features a man, a woman missing the head because of a painting detachment, and a baby.
"It could have been interpreted as a normal depiction of a family, with the baby between the parents, but other details make this drawing unique," Morelli said.
He noted the newborn is drawn slightly above, as if raising to the sky. Such position, with the baby not yet between the parents, would have meant a birth or a pregnancy.
"As death was associated to Earth in contemporary rock art from the same area, it is likely that birth was linked to the sky," Morelli said.
The scene becomes more symbolically complex if the other figures, two animals and a small circular feature, are taken into consideration.
